ron_chrissy.jpgWe operate a small scale commercial maple sugaring operation in Wayne County Pennsylvania just outside the town of Waymart. Each spring we tap several thousand sugar maple trees, collecting the sap with pipeline tubing and vacuum systems to encourage sap flow. For good sap flow we need warm days above 40 degrees and cold nights below 32 degrees. We still hang about fifty buckets each spring to preserve the old fashioned methods of sugaring that our ancestors used. It takes 40 gallons of maple sap from the sugar maple tree to produce 1 gallon of Pure Pennsylvania Maple Syrup. The sugar maple tree with its brilliant colors in the fall makes our area one of the most beautiful places to visit. The maple sap is processed with a reverse osmosis machine that removes 2/3 of the water before we boil the maple sap. The maple sap is then boiled on evaporators where it is boiled down into Pure Pennsylvania Maple Syrup.

Our roots in sugaring date back to the late 1700’s, when Samuel Preston made maple sugar in the Union Sugar Camp in northern Wayne County. The maple sugar was presented to President George Washington as a gift. We are direct descendants of Samuel Preston. Maple sugaring has been passed down through the generations in our family along with a wealth of knowledge and experience. We started producing maple syrup as a hobby over 20 years ago with a pile of cinder blocks and a flat pan. Today we use the latest technology and have the ability to produce hundreds of gallons of Pure Pennsylvania Maple Syrup during the short 4 to 6 week maple season, which starts in mid-February and lasts until the first week of April. With such a short window to produce our crop of Pure Pennsylvania Maple Syrup the task is truly a family effort with everyone being involved one way or another.
